    Add carrots and onion; saute until vegetables begin to soften.

    Add rice and contents of seasoning pouch, stir well. Cook according to directions on Near East box.

    Heat olive oil in a large saucepan over medium-high heat.

  • 4

    Once pilaf is done, stir in chicken (if using), raisins, and pine nuts.
